Maddy’s Public House, Washington’s newest neighborhood watering hole and hangout spot, is poised to expand and offer the community a full-service restaurant menu! Beginning by the end of September, Maddy’s Pub will have a full menu and kitchen operating Thursday-Sunday, with its current bar snack menu running the rest of the week. Maddy’s staff are excited to show our guests our take on classic southern inspired pub grub, along with our high level of service and attention to detail already expected in the Pub.
Paramount to this endeavor was enlisting the proper staff, primarily an Executive Chef with the vision, skill, and voice to command their kitchen and bring this vision to life. Ideally, we were also looking for a bright young person with room to grow who is willing to adapt to the desires of the community. We believe whole-heartedly that we have found that individual in Maci Marxsen.
Maci’s Bio:
“I’ve lived in Washington most of my life. I graduated WWCHS in 2017 and went onto North Georgia Tech to receive my culinary degree with a concentration in baking and pastry. My free time is mostly spent with my family and my pup Cleo. I also enjoy going to the gym and playing/coaching soccer.
Growing up I always played sports, but when I graduated and stopped playing I needed to find a new passion and creative outlet, which I found in baking. I went to UNG for a semester and baked constantly. I made french macarons for the first time in my tiny dorm kitchen. I later realized traditional university wasn’t for me and transferred to North Georgia tech. I gravitated towards pastry because I have a huge sweet tooth. I started baking for my family and friends and really enjoyed it and received good feedback, so I decided to focus and hone my skills. I graduated with my culinary degree at the top of my class.
My signature, especially in pastries, is unique flavor combinations. I love experimenting to see what unexpected flavors go really well together.
My favorite dish to eat is shrimp tacos, and my favorite dessert is lavender creme brûlée!
The Square Cafe was my first real look at how a bakery runs. When I started working there, I realized I had been so focused on learning how to craft technical, sophisticated desserts that I hadn’t even baked things like brownies or chocolate chip cookies. The Square Cafe is also where I started getting into interesting flavor combinations, and I loved seeing the customers’ shocked and pleased faces!
One of my mentors is Maeve Rochford. I would love to work with her because she’s a master at both pastry and savory. Maeve owns her own Irish inspired restaurant and has a keen sense for flavors.
